Prep

  1. 01

Mince 3 cloves garlic and 1 jalapeño.

  2. 02

Chop a generous handful of fresh cilantro.

  3. 03

Slice 0.25 of a red onion into thin pieces.

  4. 04

Dice 1 medium cucumber into bite-sized pieces.

  5. 05

Cut butter lettuce or romaine into whole leaves for wrapping.

Method

  1. 01

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

  2. 02

Add the ground beef and cook, breaking it apart with a spoon, for 5–7 minutes until browned and cooked through. Drain excess fat if needed.

  3. 03

Stir in the minced garlic and jalapeño, cooking for 1 minute until fragrant.

  4. 04

Add 2 tablespoons soy sauce, 1 teaspoon fish sauce, and the juice from 2 limes. Toss in most of the cilantro, reserving some for garnish. Cook for 1 minute more.

  5. 05

Taste and adjust seasoning with lime juice or soy sauce as needed.

  6. 06

Spoon the warm beef mixture into lettuce leaves, then top with sliced red onion, cucumber, and reserved cilantro. Serve immediately.

Spice Tips

For more heat, add an extra jalapeño or a pinch of cayenne pepper to the beef. For deeper umami, increase fish sauce by ½ teaspoon. A drizzle of sriracha or chili oil on the side lets everyone customize their spice level.
