Lime-Cilantro Ground Beef Skillet with Charred Corn
Ingredients
- 1 poundground beef
- ·yellow onion
- ·garlic
- 2 cupscorn (fresh or frozen)

- 2 tablespoonolive oil

- ¼ teaspoonred pepper flakes

Dice 1 medium yellow onion

Mince 2 cloves garlic

Chop a handful of fresh cilantro

Cut 2 limes in half for juicing, or cut into wedges for serving

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through (about 5 minutes). Drain excess fat if needed.

Push the beef to the side of the skillet and add the remaining 1 tablespoon olive oil. Add the diced onion and cook until softened (about 2 minutes), then add the minced garlic and cook for 30 seconds until fragrant.

Stir in the corn, cumin, and red pepper flakes. Cook over medium-high heat, stirring occasionally, until the corn is charred in spots and heated through (about 3 minutes).

Remove from heat. Squeeze the juice from both limes over the skillet, then stir in the chopped cilantro. Season with salt and pepper to taste.

Serve immediately in bowls or over rice, with lime wedges on the side.
Spice Tips
For more heat, increase the red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. For extra depth, try adding 1/2 teaspoon smoked paprika along with the cumin. A splash of hot sauce stirred in at the end adds another layer of brightness.
Serve over white rice, brown rice, or cauliflower rice for a heartier meal. You can also use a blend of bell peppers instead of (or alongside) the corn.
