Soy-Ginger Ground Beef with Crispy Rice

Ingredients

  • 1 poundground beef
  • 2 tablespoonvegetable oil
  • ·yellow onion

  • ·ginger
  • 3 tablespoonsoy sauce
  • 1 tablespoonrice vinegar
  • 1 teaspoonbrown sugar
  • 3 cupcooked white rice
  • ·scallion
  • 1 teaspoonsesame seeds

    Dice 1 small yellow onion

    Mince 2 cloves garlic

    Mince 1 tablespoon fresh ginger

    Slice 2 scallions on the bias

Method

    Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat.

    Add ground beef and cook until browned and cooked through, about 5 minutes, breaking it into small pieces as it cooks. Drain excess fat if needed.

    Add diced onion and cook for 2 minutes until slightly softened.

    Stir in minced garlic and minced ginger, cook for 30 seconds until fragrant.

    Pour in 3 tablespoons soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon brown sugar. Stir to combine.

    Add 3 cups cooked white rice to the pan and toss everything together until the rice is heated through and coated with the sauce, about 2 minutes.

    Top with sliced scallion and 1 teaspoon sesame seeds. Serve immediately.

Spice Tips

For heat, add a pinch of red pepper flakes or a small drizzle of hot sauce to the pan after the sauce is mixed in. For deeper ginger flavor, use a full tablespoon of ginger. A splash of low-sodium soy sauce works if you prefer less salt overall.

Have your rice cooked and ready before you start; a rice cooker or day-old rice works perfectly. This recipe doubles easily if you want leftovers.
