Citrus-Ginger Turkey and Rice Bowls
Ingredients
- 1 poundground turkey
- 1½ cuplong-grain white rice
- 3 cupchicken broth
- 2lime
- 1 tablespoonfresh ginger
- 3 clovegarlic
- 4scallions
- 2 tablespoonsoy sauce
- 1 tablespoonsesame oil
- 1 tablespoonvegetable oil
- ¼ teaspoonred pepper flakes

Prep

Mince 3 cloves garlic and 1 tablespoon fresh ginger.

Slice 4 scallions on a bias, separating white and light green parts from dark green tops.

Juice 2 limes.
Method

Bring chicken broth to a boil in a medium pot. Add rice, stir, reduce heat to low, cover, and simmer for 18 minutes until tender. Remove from heat and let stand 5 minutes.

While rice cooks, heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, for 5–7 minutes until no longer pink. Drain excess fat if needed.

Add minced garlic and minced ginger to the skillet and cook for 1 minute, stirring, until fragrant.

Stir in soy sauce, sesame oil, juice from 2 limes, and red pepper flakes. Toss to coat and cook for 1 minute. Taste and adjust seasoning with salt and black pepper.

Divide cooked rice among bowls and top with turkey mixture. Garnish with sliced scallions and serve immediately.
Spice Tips
For more heat, add a pinch of cayenne pepper or increase the red pepper flakes to ½ teaspoon. A touch of fish sauce (½ teaspoon) adds savory depth. Fresh cilantro or mint can replace or supplement the scallions for an herbaceous brightness.
