Prep

Dice 1 yellow onion.
- 02
Mince 3 cloves garlic.
- 03
Chop a small handful of fresh cilantro.
Method
- 01
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until no longer pink (about 5 minutes). Season with salt and pepper. Transfer to a plate.
- 02
In the same skillet, add remaining 1 tablespoon olive oil. Stir in harissa paste and cook for 30 seconds until fragrant, then add diced onion and minced garlic. Cook for 2 minutes until softened.
- 03
Return turkey to the skillet and stir well to coat with harissa. Add rice and stir for 1 minute to toast lightly.
- 04
Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18 minutes until rice is tender and liquid is absorbed.
- 05
Remove from heat and let sit, covered, for 3 minutes. Fluff with a fork, then squeeze lime juice over the dish and scatter cilantro on top.
Spice Tips
Harissa already brings heat and complexity, but you can dial it up: add a pinch of cayenne pepper for extra punch, or stir in 1/2 teaspoon of smoked paprika for depth. A sprinkle of hot sauce or a few sliced fresh chiles on top at the end also work. If you prefer milder, start with 1 tablespoon harissa instead of 2.
