Turkish-Spiced Ground Turkey Skillet with Tomato Rice

Ingredients

  • 1 poundground turkey
  • 1½ cupslong-grain white rice
  • ·yellow onion
  • ·garlic
  • 1 14-ounce cancanned diced tomatoes
  • 2½ cupschicken broth
  • 2 tablespoonsolive oil
  • ¾ teaspoonground cumin
  • ½ teaspoonground coriander
  • ½ teaspoonpaprika
  • ·salt
  • ·black pepper
  • ·fresh parsley

Prep

    Dice 1 medium yellow onion.

    Mince 2 cloves garlic.

    Chop a small handful of fresh parsley.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned and no pink remains, about 5-7 minutes. Drain excess fat if needed.

    Stir in the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.

    Add 1 1/2 cups rice to the pan and stir constantly for 1-2 minutes, coating it in the oil and spices.

    Stir in 3/4 teaspoon ground cumin, 1/2 teaspoon ground coriander, and 1/2 teaspoon paprika. Cook for 30 seconds.

    Pour in the 14-ounce can of diced tomatoes (with juice) and 2 1/2 cups chicken broth. Season with salt and pepper to taste. Stir well and bring to a simmer.

    Reduce heat to medium-low, cover the skillet, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed. Do not stir during cooking.

    Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and stir in chopped fresh parsley. Taste and adjust seasoning as needed. Serve warm.

Spice Tips

For warmth and depth, add 1/4 teaspoon cinnamon along with the cumin and coriander. For heat, stir in a pinch of cayenne pepper or red pepper flakes. A squeeze of fresh lemon juice at the end brightens the whole dish.
