- 3 tablespoonolive oil
- 1 teaspoonground cumin
- ½ teaspoonground coriander
- ½ teaspoonpaprika
- ·salt
- ·black pepper
- ·fresh mint
- ·fresh parsley
Prep
- 01
Dice 1 medium yellow onion.
- 02
Mince 2 cloves garlic.
- 03
Juice 1 lemon.
- 04
Chop a handful of fresh mint.
- 05
Chop a handful of fresh parsley.
Method
- 01
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it into small pieces as it browns, about 5-7 minutes until no pink remains. Season with salt and pepper, then transfer to a plate.
- 02
In the same skillet, add 2 tablespoons olive oil and sauté diced onion until softened, about 3 minutes. Add minced garlic and cook 1 minute more until fragrant.
- 03
Stir in rice and toast for 2 minutes, stirring often. Add cumin, coriander, and paprika, stirring constantly for 30 seconds.
- 04
Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Return turkey to the pan, stir well, and bring to a simmer.
- 05
Cover and reduce heat to low. Cook for 15-18 minutes until rice is tender and liquid is absorbed. Remove from heat and let sit covered for 5 minutes.
- 06
Fluff rice with a fork. Squeeze lemon juice over the top and stir gently. Taste and adjust salt and pepper as needed.
- 07
Divide among bowls and garnish with chopped fresh mint and parsley.
Spice Tips
For warmth, increase paprika to 1 teaspoon or add a pinch of cayenne. A small pinch of ground cinnamon adds subtle sweetness that complements the turkey and lemon nicely.
Serve with a yogurt sauce (stir together Greek yogurt, a squeeze of lemon, minced garlic, and salt) on the side for extra creaminess.
