Pan-Fried Halloumi with Charred Tomatoes and Herbs
Ingredients
- 8 ounceshalloumi cheese
- 1½ cupscherry tomatoes
- 3 tablespoonolive oil
- 2 clovesgarlic
- 1 tablespoonfresh oregano (or 1 teaspoon dried)
- 1lemon

Prep

Slice halloumi into 1/4-inch thick pieces.

Mince 2 cloves garlic.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.

Add halloumi slices and cook for 2 to 3 minutes per side until golden brown with slight char. Transfer to a plate.

In the same skillet, add the remaining 1 tablespoon olive oil and the garlic. Cook for 30 seconds until fragrant.

Add cherry tomatoes and oregano. Cook for 4 to 5 minutes, stirring occasionally, until tomatoes start to blister and soften.

Return halloumi to the skillet and toss gently to coat with the tomato mixture. Cook for 1 minute.

Squeeze juice from 1 lemon over everything. Season with salt, pepper, and red pepper flakes if using. Serve warm.
