  • 2 clovesgarlic
  • 1 tablespoonfresh oregano (or 1 teaspoon dried)
  • 1lemon
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes (optional)

Prep

  1. 01

Slice halloumi into 1/4-inch thick pieces.

  2. 02

    Mince 2 cloves garlic.

Method

  1. 01

Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.

  2. 02

Add halloumi slices and cook for 2 to 3 minutes per side until golden brown with slight char. Transfer to a plate.

  3. 03

In the same skillet, add the remaining 1 tablespoon olive oil and the garlic. Cook for 30 seconds until fragrant.

  4. 04

Add cherry tomatoes and oregano. Cook for 4 to 5 minutes, stirring occasionally, until tomatoes start to blister and soften.

  5. 05

Return halloumi to the skillet and toss gently to coat with the tomato mixture. Cook for 1 minute.

  6. 06

Squeeze juice from 1 lemon over everything. Season with salt, pepper, and red pepper flakes if using. Serve warm.

Spice Tips

For warmth, add a small pinch of red pepper flakes when tossing the tomatoes. A handful of fresh basil or mint scattered over the finished dish adds brightness. If you like heat, a touch of harissa or smoked paprika deepens the flavor without overwhelming the cheese.
