Pan-Seared Halloumi with Charred Lemon and Herb Oil
Ingredients

Mince 1 garlic clove.

Chop a small handful of fresh mint.

Chop a small handful of fresh parsley.
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.

Slice the halloumi into 1/2-inch-thick planks. Pat dry with a paper towel.

Working in batches if needed, sear the halloumi for 2 to 3 minutes per side until golden brown and slightly caramelized. Transfer to a plate.

In the same skillet, halve the lemon and place it cut-side down. Sear for 1 to 2 minutes until charred and juicy.

Whisk together 2 tablespoons olive oil, the minced garlic, and a pinch each of salt and pepper. Stir in the chopped mint and parsley.

Arrange the warm halloumi on a serving plate. Spoon the herb oil over and around it. Squeeze the charred lemon halves on top and serve immediately.
Spice Tips
For a subtle heat, add a pinch of red pepper flakes to the herb oil. A thin slice of fresh chile can also be seared alongside the lemon for a bright kick.
Halloumi is best served hot off the pan while the outside is still crispy. If you find the cheese too salty, a quick rinse under cold water before slicing softens the flavor.
