Garlic Mushrooms with Crispy Sage and Lemon

Ingredients

  • 1 poundmushrooms (cremini, button, or a mix)
  • 4 clovesgarlic
  • 8 leavesfresh sage
  • 1lemon
  • 3 tablespoonolive oil
  • ·salt
  • ·black pepper

Prep

    Trim mushroom stems and halve or quarter larger mushrooms so pieces are roughly bite-sized.

    Mince 4 garlic cloves.

    Cut lemon in half.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add sage leaves and cook for 1–2 minutes until crispy and fragrant. Transfer to a paper towel and set aside.

    Add remaining 1 tablespoon olive oil to the same skillet. Add minced garlic and cook for 30 seconds until aromatic.

    Add mushrooms in a single layer, season with salt and pepper, and cook without stirring for 3–4 minutes until golden on the bottom.

    Stir, then cook another 3–4 minutes until tender and any released liquid has mostly evaporated.

    Squeeze juice from half the lemon over the mushrooms, toss gently, and taste. Adjust seasoning and add more lemon juice if desired.

    Transfer to a serving plate, crumble crispy sage over top, and serve warm or at room temperature.

Spice Tips

For warmth, add a pinch of red pepper flakes to the garlic in step 2. A small pinch of dried thyme or oregano complements the sage. For brightness, finish with fresh parsley or chives instead of (or alongside) the sage.
