Garlic Mushrooms with Thyme and Lemon
Ingredients
- 1 poundmushrooms (cremini or button)
- 3 tablespoonolive oil
- 4 clovesgarlic
- 1 tablespoonfresh thyme
- 1lemon

Quarter the mushrooms (or halve if small).

Mince 4 cloves garlic.

Chop fresh parsley for garnish.
Method

Heat 3 tablespoons olive oil in a large skillet over medium-high heat until shimmering.

Add the mushrooms and cook for 4–5 minutes, stirring occasionally, until they begin to release their liquid and edges turn golden. Season with salt and pepper.

Add the minced garlic and thyme, stirring constantly for 1 minute until fragrant.

Squeeze the juice of 1 lemon into the pan and toss to coat. Cook for another minute.

Taste and adjust seasoning. Transfer to a bowl and scatter with fresh parsley before serving.
Spice Tips
For warmth, add a pinch of red pepper flakes when you add the garlic. A splash of white wine (2 tablespoons) in step 4 adds depth, or finish with a grating of Parmesan for richness.
Serve alongside crusty bread, pasta, or grain of choice. Can be made 2 hours ahead and reheated gently.
