Garlic Mushrooms with Thyme on Crispy Bread

Ingredients

  • 1 poundmushrooms (cremini or button)
  • 4 clovesgarlic
  • 2 sprigsfresh thyme
  • 3 tablespoonolive oil
  • 1lemon
  • ¼ teaspoonsea salt
  • ⅛ teaspoonblack pepper
  • 4 slicescrusty bread

    Slice mushrooms into 1/4-inch-thick pieces.

    Mince 4 cloves garlic.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

    Add mushrooms in a single layer. Don't stir for 3 minutes, then toss and cook another 3–4 minutes until golden and any liquid has mostly evaporated.

    Add garlic and thyme sprigs. Cook 1 minute until fragrant.

    Squeeze juice from lemon over mushrooms, add salt and pepper, and toss. Cook 30 seconds.

    Meanwhile, brush bread slices with remaining 1 tablespoon olive oil. Toast in a separate pan or under the broiler until crispy.

    Divide toasted bread among plates. Top with warm mushroom mixture and thyme sprigs. Serve at once.

Spice Tips

If you'd like a touch of heat, finish with a small pinch of red pepper flakes. A grating of fresh Parmesan or a drizzle of truffle oil adds earthy depth without heaviness.

This dish is best eaten immediately while the bread is still crispy and mushrooms are warm. For a heartier meal, serve over polenta or soft cheese like ricotta.
