Paneer with Charred Tomatoes and Crispy Sage
Ingredients

- 1 poundcherry tomatoes
- ¼ cupfresh sage
- 4 clovesgarlic
- 3 tablespoonolive oil
- 1lemon

Prep

Cut paneer into 1-inch cubes.

Halve the cherry tomatoes.

Mince 4 cloves garlic.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Once shimmering, add the paneer cubes and cook for 2-3 minutes per side until light golden, then transfer to a plate.

In the same skillet, add cherry tomatoes and cook undisturbed for 3-4 minutes until blistered and charred on one side.

Stir in minced garlic and cook for 30 seconds until fragrant.

Return paneer to the skillet, add the remaining 1 tablespoon olive oil and the sage leaves, and toss gently for 1 minute.

Squeeze fresh lemon juice over everything, season with salt and pepper to taste, and serve warm.
Spice Tips
For warmth, add a pinch of red pepper flakes when you cook the garlic. For herbal depth, swap half the sage for fresh basil or oregano. A touch of cumin or coriander seed toasted with the oil at the start also complements paneer beautifully.
