Garlic-Butter Pasta with Crispy Kale & Lemon
Ingredients
- 1 poundpasta
- 1 bunchkale
- 6 clovesgarlic
- 4 tablespoonbutter
- 1lemon
- ¼ teaspoonred pepper flakes

- ·black pepper
- ½ cupparmesan cheese (for serving)

Roughly chop or tear 1 bunch kale into bite-sized pieces, discarding thick stems.

Mince 6 garlic cloves.
Method

Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve 1 cup pasta water before draining.

While the pasta cooks, heat 2 tablespoons butter in a large skillet over medium-high heat. Add minced garlic and red pepper flakes; cook for 1 minute until fragrant.

Add the kale pieces to the skillet and stir frequently for 4–5 minutes, until the leaves are tender and edges are crispy. Season with salt and pepper.

Add the cooked pasta to the skillet along with the remaining 2 tablespoons butter. Toss gently, adding pasta water a splash at a time until the pasta is glossy and lightly coated (you may not need all of it).

Squeeze in the juice of 1 lemon, taste, and adjust salt and pepper. Serve immediately with grated parmesan cheese.
Spice Tips
Add more red pepper flakes (up to ½ teaspoon total) for gentle heat. A pinch of nutmeg or a splash of white wine can deepen the flavor. Fresh mint or parsley stirred in at the end adds brightness.
