Crispy Pork Chops with Mustard-Roasted Potatoes

- 1 poundrusset potatoes

- 2 tablespoonDijon mustard

Cut 1 pound russet potatoes into 1-inch chunks.

Cut potatoes into 1-inch chunks and toss with 1 1/2 tablespoons olive oil, salt, and pepper. Spread on a large sheet pan and roast at 425°F for 15 minutes.

Meanwhile, pat pork chops dry and season both sides with salt and pepper.

Remove the pan from the oven and push potatoes to the sides. Nestle pork chops in the center and drizzle with remaining 1 1/2 tablespoons olive oil.

Stir together Dijon mustard with minced garlic. Brush the mixture over the pork chops.

Scatter thyme sprigs over everything and return the pan to the oven.
