Crispy Pork Chops with Mustard-Roasted Potatoes

Ingredients

  • 4pork chops (1 inch thick)
  • 1 poundrusset potatoes
  • 3 tablespoonolive oil
  • 2 tablespoonDijon mustard
  • 3 clovesgarlic
  • 4 sprigsfresh thyme
  • ½ teaspoonkosher salt
  • ¼ teaspoonblack pepper

Prep

    Cut 1 pound russet potatoes into 1-inch chunks.

    Mince 3 cloves garlic.

Method

    Cut potatoes into 1-inch chunks and toss with 1 1/2 tablespoons olive oil, salt, and pepper. Spread on a large sheet pan and roast at 425°F for 15 minutes.

    Meanwhile, pat pork chops dry and season both sides with salt and pepper.

    Remove the pan from the oven and push potatoes to the sides. Nestle pork chops in the center and drizzle with remaining 1 1/2 tablespoons olive oil.

    Stir together Dijon mustard with minced garlic. Brush the mixture over the pork chops.

    Scatter thyme sprigs over everything and return the pan to the oven.

    Roast for 12–15 minutes, until pork reaches an internal temperature of 145°F and potatoes are tender and golden.

    Rest for 2 minutes before serving.

Spice Tips

For a sharper bite, use whole-grain mustard instead of Dijon. Add a pinch of cayenne pepper to the mustard mixture for subtle heat. A squeeze of fresh lemon juice over the finished dish brightens the flavors.
