Chili-Crisp Pork Chops with Charred Scallions

- 4 clovesgarlic

Mince 4 garlic cloves.

Cut 8 scallions into 2-inch pieces.

Pat the pork chops dry with paper towels, then season both sides generously with kosher salt and black pepper.

Heat 2 tablespoons chili crisp oil in a large skillet over medium-high heat until shimmering, about 2 minutes.

Add the pork chops and sear for 5 to 6 minutes on the first side, undisturbed, until golden brown.

Flip and sear another 4 to 5 minutes until cooked through (internal temperature 145°F). Transfer to a plate.

In the same skillet, add the remaining 2 tablespoons chili crisp oil. Add the scallions and cook 2 to 3 minutes, stirring, until charred and softened.

Stir in the minced garlic and cook 30 seconds until fragrant, then pour in the soy sauce and squeeze of lime juice.

Return the pork chops to the pan, coat in the sauce, and serve hot with the charred scallions and pan sauce spooned over top.
Spice Tips
The chili crisp provides gentle heat and crispy texture. For more punch, stir an extra 1/2 teaspoon of red pepper flakes into the pan sauce, or drizzle a touch more chili crisp over the finished dish. A squeeze of fresh lime brightens the whole plate—don't skip it.
