Crispy Pork Chops with Harissa-Honey Glaze

Mince 2 garlic cloves.

Juice 1 lime.

Pat the pork chops dry with paper towels. Season both sides generously with kosher salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the pork chops and sear for 5–6 minutes per side until golden and cooked through (internal temp 145°F). Transfer to a plate.

In the same skillet, whisk together harissa paste, honey, minced garlic, water, and juice from the lime. Simmer for 1–2 minutes, stirring constantly, until glossy and slightly thickened.

Return the pork chops to the skillet, toss to coat in the glaze, and warm through for 1 minute. Serve immediately.
Spice Tips
For a milder glaze, reduce harissa to 1 tablespoon and add an extra tablespoon of honey. For serious heat, stir in a pinch of cayenne pepper or a few dashes of hot sauce. A sprinkle of cilantro or parsley on top adds a fresh, cooling contrast to the spice.
Harissa paste packs bold, complex heat without overwhelming the pork. If you can't find it, substitute with 1 tablespoon hot sauce mixed with 1 teaspoon smoked paprika. The glaze doubles beautifully if cooking for a crowd.
