Citrus-Glazed Pork Tenderloin with Ginger and Scallion
Ingredients

- 1lime
- 2 tablespoonsfresh ginger
- 3 tablespoonssoy sauce
- 1 tablespoonhoney
- 4scallions
- 3 clovesgarlic

Juice 2 oranges and 1 lime into a measuring cup.

Mince 2 tablespoons fresh ginger and 3 cloves garlic.

Slice 4 scallions into thin rings, separating white and green parts.

Pat pork tenderloin dry with paper towels and season generously with salt and pepper on all sides.

Heat olive oil in a large skillet over medium-high heat. When shimmering, sear the tenderloin for 2 to 3 minutes per side, until deeply browned. Transfer to a plate.

In a small bowl, whisk together the orange juice (about 1 cup), lime juice, soy sauce, honey, minced ginger, and minced garlic.

Return the pork to the skillet and pour the glaze around it. Bring to a simmer, then reduce heat to medium and cook for 12 to 15 minutes, turning the pork halfway through, until a meat thermometer reads 140–145°F (for medium-rare).

Transfer pork to a cutting board and let rest for 5 minutes. Simmer the glaze in the skillet for 1 to 2 minutes to reduce slightly.

Slice pork into ½-inch-thick pieces, arrange on a plate, drizzle with warm glaze, and garnish with sliced scallions.
Spice Tips
For gentle heat, stir 1/4 teaspoon white pepper or a small pinch of red pepper flakes into the glaze. For deeper spice, add 1/2 teaspoon sriracha or a dash of white miso paste to round out the umami.
