Cilantro-Lime Rice with Charred Shrimp & Avocado
Ingredients
- 1½ cupswhite rice
- 3 cupswater
- ·salt
- 2lime
- ½ cupcilantro
- 1 poundshrimp (large, peeled and deveined)
- 2avocado
- 3 tablespoonolive oil
- 3 clovesgarlic
- ¼ teaspoonred pepper flakes
- ·black pepper
Prep

Peel and devein 1 pound large shrimp if not pre-cleaned.

Juice 2 limes.
- 03
Mince 3 cloves garlic.
- 04
Roughly chop 1/2 cup fresh cilantro.

Halve and pit 2 avocados, then slice just before assembly.
Method

Bring 3 cups water and a pinch of salt to a boil in a medium pot. Stir in 1 1/2 cups rice, reduce heat to low, cover, and simmer for 18 minutes until tender and water is absorbed.

While rice cooks, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then add to the skillet in a single layer. Cook 2 to 3 minutes per side until pink and just cooked through. Transfer to a plate.

In a small bowl, whisk together the juice of 2 limes, remaining 1 tablespoon olive oil, minced garlic, and red pepper flakes.

Fluff cooked rice with a fork and transfer to a serving bowl. Stir in the lime dressing and chopped cilantro. Taste and adjust salt as needed.

Top rice with charred shrimp and sliced avocado just before serving.
Spice Tips
For more heat, increase red pepper flakes to 1/2 teaspoon or add a diced jalapeño. A pinch of cumin or smoked paprika adds subtle warmth. If you prefer earthiness, stir in a handful of fresh mint or basil alongside the cilantro.
