Crispy Salmon with Charred Broccoli and Lemon-Caper Drizzle

Ingredients

  • 4 6-ouncesalmon fillets (skin-on)
  • 1½ poundsbroccoli
  • 3 tablespoonolive oil
  • 2lemon
  • 3 tablespooncapers
  • 3 clovegarlic
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes

Prep

    Mince 3 cloves garlic.

    Cut broccoli into 2-3 inch florets.

    Juice 1 lemon (you need about 2 tablespoons).

Method

    Preheat oven to 425°F.

    Pat salmon dry with paper towels. Brush skin side with 1/2 tablespoon olive oil and season with salt and pepper.

    Cut broccoli into florets. Toss with 1 tablespoon olive oil, salt, and pepper. Spread on one side of a large rimmed baking sheet.

    Roast broccoli for 10 minutes until it starts to char.

    Pull the sheet out and push broccoli to the sides. Place salmon skin-side down in the center. Roast together for 12–14 minutes until salmon is opaque and flakes easily.

    While salmon cooks, combine 1 tablespoon olive oil, capers, minced garlic, juice of 1 lemon, red pepper flakes, and a pinch of salt in a small bowl.

    Transfer salmon and broccoli to plates. Drizzle caper-lemon mixture over salmon. Cut remaining lemon into wedges and serve on the side.

Spice Tips

For extra depth, add 1/2 teaspoon smoked paprika to the caper drizzle. If you like heat, increase red pepper flakes to 1/2 teaspoon or add a small pinch of cayenne. A handful of fresh dill or parsley stirred into the drizzle at the end adds herbal brightness.
