Crispy Salmon with Charred Broccoli and Lime-Ginger Drizzle

Ingredients

  • 4 6-ouncesalmon fillets (skin-on)
  • 1 poundbroccoli
  • 3 tablespoonolive oil
  • ·salt
  • ·black pepper
  • 1lime
  • 1 tablespoonfresh ginger
  • 1 tablespoonsoy sauce
  • ½ teaspoonhoney
  • 2 clovesgarlic
  • ½ teaspoonsesame oil

Prep

    Mince 1 tablespoon fresh ginger.

    Mince 2 garlic cloves.

    Juice 1 lime.

Method

    Pat the salmon fillets dry with paper towels and season both sides generously with salt and pepper.

    Cut the broccoli into florets, roughly 2 to 3 inches each. Toss with 2 tablespoons of olive oil, 1/4 teaspoon salt, and a pinch of black pepper.

    Heat a large skillet over medium-high heat for 2 minutes. Add the broccoli in a single layer and cook undisturbed for 3 to 4 minutes until the bottoms char. Stir and cook another 2 minutes. Transfer to a plate.

    In the same skillet, add 1 tablespoon olive oil. Once shimmering, place salmon fillets skin-side up and cook for 3 to 4 minutes until the skin is crispy and golden. Flip and cook skin-side down for another 2 to 3 minutes until just cooked through.

    While the salmon cooks, whisk together the lime juice, minced ginger, minced garlic, soy sauce, honey, and sesame oil in a small bowl.

    Divide salmon and broccoli among four plates. Drizzle the lime-ginger sauce over everything and serve immediately.

Spice Tips

For heat, stir a pinch of red pepper flakes into the lime-ginger drizzle. For more umami depth, add another teaspoon of soy sauce or a dash of fish sauce.
