Pan-Seared Salmon with Charred Broccoli and Garlic Oil

Ingredients

  • 4 fillets (6 ounces each)salmon fillets (skin-on)
  • 1 poundbroccoli
  • 4 clovesgarlic
  • ¼ cupolive oil
  • 1 wholelemon
  • 1 teaspoonkosher salt
  • ½ teaspoonblack pepper
  • ¼ teaspoonred pepper flakes

    Cut broccoli into bite-sized florets.

    Mince 4 cloves garlic.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Pat salmon skin-side down into the pan. Cook for 4 minutes until skin is crispy, then flip and cook 2 more minutes. Season with salt and pepper. Transfer to a plate.

    Add remaining 2 tablespoons olive oil and the minced garlic to the same skillet. Cook for 30 seconds until fragrant.

    Add broccoli florets to the pan and toss to coat with garlic oil. Season with salt and a pinch of red pepper flakes. Cook, stirring occasionally, for 5–6 minutes until the broccoli is tender with charred edges.

    Return salmon to the pan, skin-side up, nestling it among the broccoli. Cook for 1 minute to warm through. Squeeze lemon over everything and serve.

Spice Tips

Add a pinch more red pepper flakes for subtle heat. A small pinch of smoked paprika (¼ teaspoon) deepens the savory flavor. Finish with fresh dill or parsley if you have it on hand.

For extra veggie, swap half the broccoli for snap peas or green beans. Salmon skin-on is forgiving and adds flavor; if your fillets are skinless, reduce sear time to 3 minutes per side.
