Pan-Seared Salmon with Charred Broccoli and Lemon Butter
Ingredients
- 4 fillets (6 oz each)salmon fillets (skin-on)
- 1 large headbroccoli
- 3 tablespoonolive oil
- 3 tablespoonbutter
- 2lemon
- 3 clovesgarlic
- 1 teaspoonkosher salt
- ½ teaspoonblack pepper
- ¼ teaspoonred pepper flakes

Cut broccoli into florets, about 2-3 inches each.

Mince 3 cloves garlic.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

Place salmon fillets skin-side down in the pan. Sear for 5-6 minutes until the skin is crispy and the flesh is opaque halfway up. Flip and cook 2 minutes more. Transfer to a plate.

Add remaining 1 tablespoon olive oil to the pan. Add broccoli florets in a single layer. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook undisturbed for 4 minutes until the bottoms char, then toss and cook 2 minutes more. Transfer to the plate with salmon.

Reduce heat to low. Add butter and minced garlic to the pan. Cook for 30 seconds until fragrant.

Juice both lemons into the pan and stir. Divide the lemon butter among plates, drizzle over salmon and broccoli. Finish with a pinch of red pepper flakes.
Spice Tips
For heat and depth, increase red pepper flakes to 1/2 teaspoon or add a pinch of smoked paprika to the lemon butter. A whisper of fresh thyme or dill stirred in at the end adds herbal brightness.
