- 6 clovesgarlic
- 4 tablespoonolive oil
- 1 wholelemon
- ·salt
- ·black pepper
- ¼ teaspoonred pepper flakes
Prep
- 01
Cut broccoli into florets, roughly 3 inches each.
- 02
Mince 6 cloves garlic.
Method
- 01
Preheat oven to 425°F.
- 02
On a large rimmed baking sheet, toss the broccoli florets with 2 tablespoons olive oil, salt, and pepper. Spread in a single layer and roast for 12 minutes until the edges begin to char.
- 03
Push the broccoli to the sides of the sheet. Arrange the salmon fillets skin-side down in the center. Drizzle with 1 tablespoon olive oil and season with salt and pepper.
- 04
Roast for 10 to 12 minutes, until the salmon is opaque and flakes gently with a fork.
- 05
While the salmon cooks, warm the remaining 1 tablespoon olive oil in a small skillet over medium heat. Add the minced garlic and red pepper flakes, stirring constantly until fragrant and golden, about 1 to 2 minutes. Set aside.
- 06
Remove the sheet from the oven. Squeeze fresh lemon juice over the salmon and broccoli. Drizzle the crispy garlic oil over everything and serve immediately.
Spice Tips
If you like more heat, increase the red pepper flakes to 1/2 teaspoon or finish with a few flakes of fleur de sel. A pinch of smoked paprika dusted over the salmon before roasting adds depth without spice.
This recipe is naturally flexible—if your salmon fillets are thicker or thinner, adjust the roasting time by 2 to 3 minutes. Pair with rice, crusty bread, or pasta to soak up the garlic oil.
