Pan-Seared Salmon with Crispy Garlic Green Beans

Ingredients

  • 4 ouncessalmon fillet (skin-on)
  • 6 ouncesgreen beans
  • 2 tablespoonolive oil
  • 3 clovegarlic
  • ½lemon
  • ·kosher salt
  • ·black pepper

    Trim the green beans and discard the stem ends.

    Mince 3 cloves garlic.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Pat the salmon dry with paper towels and season both sides with salt and pepper.

    Once the oil shimmers, place the salmon skin-side up in the pan. Cook for 4 minutes without moving it until the skin is golden and crispy.

    Flip the salmon and cook for 2 to 3 minutes more, until it flakes easily with a fork. Transfer to a plate.

    Add the remaining 1 tablespoon olive oil to the same pan. Add the garlic and cook for 30 seconds until fragrant.

    Add the green beans, season with salt and pepper, and cook for 3 to 4 minutes, stirring occasionally, until tender-crisp and lightly browned at the edges.

    Divide the beans between two plates and top with salmon. Squeeze fresh lemon juice over both and serve immediately.

Spice Tips

For subtle heat, add a pinch of red pepper flakes to the garlic in step 4. A small splash of white wine or low-sodium soy sauce deglazes the pan beautifully and adds depth.
