- 4 clovesgarlic
- 4 tablespoonsunsalted butter
- 2 tablespoonsolive oil
- 1 wholelemon
- ½ teaspoonkosher salt
- ¼ teaspoonblack pepper
- ¼ teaspoonred pepper flakes
Prep
- 01
Mince 4 garlic cloves.
- 02
Trim the ends from 1 pound green beans.
Method
- 01
Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
- 02
Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.
- 03
Place salmon skin-side up in the pan. Sear for 4–5 minutes without moving until the skin is golden and crispy.
- 04
Flip and cook skin-side down for another 3–4 minutes until the flesh is opaque and flakes easily. Transfer to a plate and tent loosely with foil.
- 05
Add remaining 1 tablespoon olive oil to the same skillet. Add green beans and cook over medium-high heat for 5 minutes, stirring occasionally, until they begin to soften and brown at the edges.
- 06
Push green beans to the sides of the pan. Add 4 tablespoons butter and minced garlic to the center. Swirl and cook for 1–2 minutes until the butter turns golden brown and smells nutty.
- 07
Toss green beans to coat in the brown butter and garlic. Season with red pepper flakes, salt, and pepper. Cook 1 more minute.
- 08
Divide green beans and pan sauce among plates. Top each with a salmon fillet. Squeeze fresh lemon juice over everything and serve immediately.
Spice Tips
Red pepper flakes are already in the recipe, but you can boost warmth by adding a pinch of cayenne to the brown butter. For a brighter, more herbaceous finish, scatter fresh thyme or parsley over the finished dish.
