Ingredients

  • 4 4 oz eachsalmon fillets (skin-on)
  • 1 poundgreen beans
  • 3 tablespoonbutter
  • 4 clovesgarlic
  • 1lemon
  • ·salt

  • 1 tablespoonolive oil

Prep

    Trim the stem ends from 1 pound green beans.

    Mince 4 cloves garlic.

    Cut 1 lemon into wedges.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once shimmering, place salmon skin-side up and cook for 4-5 minutes, until the skin is crispy and releases easily from the pan. Flip and cook for another 2-3 minutes until just cooked through. Transfer to a plate and season with salt and pepper.

    In the same skillet, melt 3 tablespoons butter over medium heat. Add minced garlic and cook for 1-2 minutes, stirring often, until golden and fragrant.

    Add the cooked green beans to the butter and garlic, tossing to coat. Cook for 1-2 minutes to warm through and infuse with the garlic brown butter. Squeeze fresh lemon juice over top, season with salt and pepper.

    Divide the green beans between plates, top each with a salmon fillet, and drizzle any remaining garlic butter from the skillet over the fish. Serve immediately with lemon wedges.

Spice Tips

For warmth and depth, add a pinch of smoked paprika or red pepper flakes to the brown butter. A touch of fresh thyme or dill in the garlic butter adds earthy herbal notes without overpowering the salmon.

Salmon cooks quickly, so have everything prepped and ready before you start cooking. If your green beans are thick, blanch them for 3-4 minutes in salted boiling water before pan-searing to ensure they're tender.
