Pan-Seared Salmon with Garlic-Butter Green Beans
Ingredients
- 4 (6 oz each)salmon fillets (skin-on)
- 1 poundfresh green beans
- 4 clovesgarlic
- 3 tablespoonunsalted butter
- 1lemon

Trim the stem ends from 1 pound green beans.

Mince 4 cloves garlic.

Cut 1 lemon into wedges or halves for squeezing.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper. Place skin-side up in the hot skillet and cook for 4-5 minutes until the skin is crispy and golden.

Flip the salmon and cook for another 2-3 minutes until just cooked through (the flesh should flake easily). Transfer to a plate.

In the same skillet, melt 2 tablespoons of butter over medium heat. Add the green beans and a pinch of salt, stirring often, for 4-5 minutes until they're tender-crisp and beginning to color.

Push the green beans to the side of the skillet. Add the remaining 1 tablespoon butter and the minced garlic to the cleared space and cook for about 1 minute, stirring gently, until fragrant.

Toss the green beans with the garlic butter until well coated. Squeeze the lemon juice over everything and season with salt and pepper to taste.

Divide the salmon and green beans among four plates and serve immediately.

For a subtle kick, add 1/4 teaspoon red pepper flakes to the garlic butter. Fresh thyme or dill scattered over the finished plate adds herbaceous warmth. A touch of Dijon mustard whisked into the butter gives a sophisticated depth.
