Pan-Seared Salmon with Garlic-Butter Green Beans and Lemon

Ingredients

  • 4salmon fillets (6 ounces each, skin-on)
  • 1 poundgreen beans
  • 4 clovesgarlic
  • 3 tablespoonbutter
  • 1lemon
  • 2 tablespoonolive oil
  • 1 teaspoonkosher salt
  • ½ teaspoonblack pepper
  • ¼ teaspoonred pepper flakes

Prep

    Trim the ends from 1 pound of green beans.

    Mince 4 cloves garlic.

    Cut 1 lemon in half.

Method

    Pat the salmon fillets dry with paper towels and season both sides evenly with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once shimmering, place salmon skin-side up in the pan and cook for 5-6 minutes without moving, until the skin is crispy and the flesh is opaque halfway up the fillet.

    Flip the salmon and cook for another 2-3 minutes until just cooked through. Transfer to a plate and tent with foil to keep warm.

    In the same skillet, heat 1 tablespoon olive oil and 1 1/2 tablespoons butter over medium heat. Add the green beans and cook for 4-5 minutes, stirring occasionally, until bright green and tender-crisp.

    Push the green beans to the edges of the pan, add the remaining 1 1/2 tablespoons butter and minced garlic to the center, and cook for 1 minute until fragrant. Toss the green beans with the garlic butter and season with 1/2 teaspoon salt and a pinch of red pepper flakes.

    Divide the green beans among four plates, top each with a salmon fillet, and squeeze fresh lemon juice over everything. Serve immediately.

Spice Tips

For a spicy kick, add 1/4 teaspoon cayenne or a pinch of smoked paprika to the garlic butter. Fresh dill or tarragon scattered over the finished dish add brightness. A splash of white wine deglazes the pan beautifully if you'd like extra sauce.

The salmon can be cooked while the beans are prepped; the whole dinner comes together in about 20 minutes. Choose fillets of similar thickness so they cook evenly.
