Pan-Seared Salmon with Garlic-Ginger Green Beans

Trim green beans by removing stem ends.

Mince 4 cloves garlic and grate 1 tablespoon fresh ginger.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season salmon fillets on both sides with salt and pepper. Once oil shimmers, place salmon skin-side up in the pan and cook for 4 minutes until the skin is crispy. Flip and cook for another 2 to 3 minutes until just cooked through. Transfer to a plate.

In the same skillet, add remaining 1 tablespoon olive oil. Add minced garlic and ginger, stirring constantly for 30 seconds until fragrant.

Add green beans and 2 tablespoons water. Cook for 4 to 5 minutes, stirring occasionally, until green beans are tender-crisp.

Stir in soy sauce, rice vinegar, and sesame oil. Toss green beans to coat evenly and cook for 1 minute.

Divide green beans among plates, top with salmon, and squeeze fresh lime juice over everything. Serve immediately.
