- 1 tablespoonfresh ginger
- 2 wholelime
- 3 tablespoonolive oil
- 2 tablespoonsoy sauce
- 1 teaspoonsesame oil
- ·salt
- ·black pepper
Prep
- 01
Trim the ends from 1 pound green beans.
- 02
Mince 4 cloves garlic.
- 03
Grate or finely mince 1 tablespoon fresh ginger.
Method
- 01
Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
- 02
Heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, place salmon skin-side down and cook for 5–6 minutes, until the skin is crispy. Flip and cook 2–3 minutes more, until just cooked through. Transfer to a plate.
- 03
In the same skillet, add remaining 1 1/2 tablespoons olive oil over medium-high heat. Add green beans and cook, stirring occasionally, for 5 minutes until they begin to char and soften.
- 04
Add minced garlic and ginger to the beans and cook for 1 minute, stirring, until fragrant.
- 05
Pour in soy sauce and sesame oil, toss to coat, and cook for another minute. Squeeze juice from 1 lime over the beans and toss again.
- 06
Divide salmon and green beans among plates. Cut remaining lime into wedges and serve alongside for extra brightness.
Spice Tips
For extra heat, add a pinch of red pepper flakes to the green beans while they cook, or drizzle a touch of sriracha over the finished plate. A sprinkle of sesame seeds adds nutty richness and visual appeal.
If you prefer a milder ginger flavor, start with 1 1/2 teaspoons and adjust to taste. Salmon is best served warm and fresh off the pan.
