Pan-Seared Salmon with Garlic-Lemon Green Beans
Ingredients
- 4 fillets (6 ounces each)salmon fillets (skin-on)
- 1 poundgreen beans
- 4 clovesgarlic
- 1lemon
- 3 tablespoonolive oil
- ·salt
- ·black pepper
- 4 sprigsfresh thyme
Prep
- 01
Mince 4 cloves garlic.
- 02
Trim ends from 1 pound green beans.
- 03
Cut 1 lemon in half.
Method
- 01
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Pat salmon dry with paper towels, season both sides generously with salt and pepper.
- 02
Once the oil shimmers, place salmon skin-side up in the pan. Cook for 4–5 minutes without moving, until the skin is crispy and golden. Flip and cook for another 2–3 minutes until just cooked through (the flesh should flake easily). Transfer to a plate.
- 03
In the same pan, heat the remaining 2 tablespoons olive oil over medium-high heat. Add green beans, season with salt and pepper, and cook for 4–5 minutes, stirring occasionally, until they have light char marks and are tender-crisp.
- 04
Add minced garlic and fresh thyme to the green beans, cooking for 30 seconds until fragrant. Squeeze the lemon juice over the beans and toss to combine.
- 05
Divide salmon and green beans between plates. Serve immediately.
Spice Tips
Add a pinch of red pepper flakes to the green beans for subtle heat. A touch of Dijon mustard whisked into the pan drippings creates a quick pan sauce. Fresh dill or tarragon can replace thyme for different herbal notes.
Salmon cooks quickly; watch carefully to avoid overcooking. For a richer finish, top with a small pat of butter just before serving.
