Soy-Ginger Salmon with Crispy Noodles and Bok Choy
Ingredients
- 1 poundsalmon fillet (skin-on)
- 2 tablespoonfresh ginger
- 3 clovesgarlic
- 3 tablespoonsoy sauce
- 1 tablespoonrice vinegar
- 1 tablespoonsesame oil
- 8 ounceramen noodles
- 4 ouncebok choy
- 2 tablespoonolive oil
- 2 cupwater
- 2 wholegreen onion
- 1 teaspoonsesame seeds
Prep

Mince 2 tablespoons fresh ginger and 3 cloves garlic.

Slice 4 green onion tops into thin rings.
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

Season the salmon with salt and pepper. Place skin-side down in the skillet and cook for 4 minutes without moving. Flip and cook for another 3 minutes until just cooked through. Transfer to a plate.

In the same skillet, heat 1 tablespoon olive oil. Add the minced ginger and garlic, stir constantly for 30 seconds until fragrant.

Add 2 cups water, 3 tablespoons soy sauce, 1 tablespoon rice vinegar, and bring to a boil.

Add ramen noodles and cook for 3 minutes, breaking apart as they soften.

Add bok choy and cook for 2 minutes until tender. Stir in 1 tablespoon sesame oil.

Break the salmon into bite-sized pieces and return to the skillet. Toss gently to combine.

Divide into bowls and garnish with sliced green onion and sesame seeds.
Spice Tips
For subtle heat, add a pinch of white pepper or a few red pepper flakes. For deeper umami, stir in 1 teaspoon of miso paste with the ginger and garlic. A drizzle of chili oil at the end adds complexity.
Discard the ramen seasoning packet. For a richer sauce, add 2 tablespoons of soy sauce in step 6. This dish is best served immediately.
