Salmon with Brown Butter and Crispy Sage
Ingredients
- 4 fillets (6 ounces each)salmon fillets (skin-on)
- 4 tablespoonsbutter
- 12 leavesfresh sage leaves
- 1lemon

Juice 1 lemon.

Pick 12 fresh sage leaves from the stems.
Method

Pat salmon fillets dry with paper towels and season both sides generously with salt and pepper.

Heat a large skillet over medium-high heat until very hot, about 2 minutes.

Add salmon skin-side up to the dry pan and cook without moving for 5 minutes, until the skin is golden and crispy.

Flip salmon and cook for another 2–3 minutes, until just cooked through (the center should be opaque with a gentle blush).

Reduce heat to medium. Add butter and sage leaves to the pan, tilting it so the butter foams and browns, about 2 minutes. Spoon the foaming butter and sage over the salmon.

Squeeze fresh lemon juice over the salmon, then divide among four plates. Drizzle with the brown butter and sage from the pan.
Spice Tips
Brown butter and sage are perfect as-is, but if you'd like warmth, add a pinch of cayenne pepper when seasoning the salmon. A whisper of garlic powder (1/8 teaspoon per fillet) in the initial seasoning works beautifully too.
