Sausage, Pepper & Basil Skillet with Lemon
Ingredients
- 1 poundItalian sausage (hot or sweet, your preference)
- 2red bell pepper
- 1yellow bell pepper
- 1 mediumyellow onion
- 3 clovesgarlic
- 2 tablespoonolive oil
- ½ cupdry white wine
- 1 cupcherry tomatoes
- ¼ cupfresh basil
- 1lemon
- ·salt

Prep

Dice red and yellow peppers into 1-inch pieces.

Dice 1 medium yellow onion.

Mince 3 cloves garlic.

Chop fresh basil (about 1/4 cup).
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage, breaking it into bite-sized chunks as it cooks, until browned and cooked through, about 8–10 minutes. Transfer to a plate.

Add remaining 1 tablespoon oil to the same pan. Add diced peppers and onion, cook until softened and lightly caramelized, about 7 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Pour in wine and scrape up any brown bits from the bottom of the pan. Let simmer for 2 minutes.

Return sausage to the pan, add cherry tomatoes, and simmer for 3–4 minutes until tomatoes just begin to soften.

Remove from heat, stir in fresh basil, and squeeze the juice of 1 lemon over everything. Taste and adjust salt and pepper. Serve warm.
Spice Tips
If you like heat, use hot Italian sausage and add a pinch of red pepper flakes to the skillet when you add the garlic. For Mediterranean depth, stir in a small handful of Kalamata olives in the last minute of cooking.
Serve as-is in bowls, over pasta, or spooned into crusty bread. Leftovers keep for 3 days refrigerated.
