Sausage & Peppers with Lemon-Herb Oil

Ingredients

  • 1 poundItalian sausage (hot or sweet, your preference)
  • 2red bell pepper
  • 2yellow bell pepper
  • 1 mediumyellow onion
  • 4 clovesgarlic
  • 3 tablespoonolive oil
  • 1lemon
  • ¼ cupfresh basil
  • ¼ cupfresh parsley
  • ¼ teaspoonred pepper flakes
  • 1 teaspoonsalt
  • ½ teaspoonblack pepper

Prep

    Core and slice 2 red bell peppers and 2 yellow bell peppers into 1/4-inch strips.

    Slice 1 medium yellow onion into strips.

  3. 03

    Mince 4 cloves garlic.

  4. 04

    Roughly chop 1/4 cup fresh basil and 1/4 cup fresh parsley.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the sausage, breaking it into bite-sized pieces as it cooks, about 5–7 minutes. Transfer to a plate.

    In the same skillet, add 1 more tablespoon olive oil. Slice the peppers and onion into strips; add to the pan along with a pinch of salt. Sauté until softened and slightly caramelized, about 8–10 minutes.

    Mince the garlic and add to the pan along with the red pepper flakes. Cook for 1 minute until fragrant.

    Return the sausage to the skillet. Zest the lemon over the pan, then squeeze in the juice. Stir in the fresh basil and parsley. Taste and adjust salt and pepper.

    Drizzle with the remaining 1 tablespoon olive oil and serve over pasta, rice, crusty bread, or on its own.

Spice Tips

For deeper heat, increase the red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. If you like more acidity, grate additional lemon zest over the finished dish or add a splash of white wine vinegar.

Serve with your favorite starch (pasta, polenta, crusty bread) or simply in a bowl. Leftovers reheat beautifully in a skillet.
