Sheet Pan Sausage & Peppers with Crispy Garlic

Ingredients

  • 1½ poundsItalian sausage (sweet or hot, casings removed)
  • 3 wholebell pepper (mix of red, yellow, or orange)
  • 1 wholeyellow onion (large)
  • 6 clovesgarlic
  • 3 tablespoonsolive oil
  • 1 tablespoonbalsamic vinegar
  • 1 teaspoonsalt
  • ½ teaspoonblack pepper
  • ¼ teaspooncrushed red pepper flakes (optional)

Prep

    Dice 3 bell peppers and 1 large yellow onion into bite-sized chunks.

    Mince or slice 6 garlic cloves.

Method

    Preheat oven to 450°F.

    Scatter sausage crumbles, peppers, onion, and garlic across a large sheet pan. Drizzle with 3 tablespoons olive oil, then season with salt, black pepper, and red pepper flakes if using. Toss to coat evenly.

    Roast for 18–22 minutes, stirring halfway through, until sausage is cooked through (no pink), peppers are tender and lightly charred at the edges, and garlic is soft and golden.

    Drizzle with balsamic vinegar, toss once, and serve hot.

Spice Tips

For deeper heat, add 1/2 teaspoon smoked paprika to the pan before roasting. Fresh basil or parsley scattered at the end brightens the dish. A squeeze of fresh lemon juice just before serving adds acidity.
