Sausage and Charred Broccoli with Crispy Garlic Oil

- 1 poundbroccoli
- 6 clovesgarlic
- ⅓ cupolive oil
- ½ teaspoonred pepper flakes

Mince 6 garlic cloves.

Cut 1 pound broccoli into bite-sized florets.

Cut broccoli into bite-sized florets. Remove sausage from casing if needed and break into rough 1-inch pieces.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up as it browns, 6–8 minutes until no pink remains. Transfer to a plate with a slotted spoon.

Add remaining 2 tablespoons oil to the same skillet, still over medium-high heat. Scatter broccoli in a single layer and let sit undisturbed for 3 minutes to char. Stir and cook another 3–4 minutes until tender and lightly blackened at the edges.

Push broccoli to the side. Add minced garlic and red pepper flakes to the center and cook for 30 seconds until fragrant. Return sausage to the pan and toss everything together.

Season with salt and pepper to taste. Serve hot, drizzled with the garlicky oil from the bottom of the pan.
Spice Tips
This recipe already packs heat from hot sausage and red pepper flakes. If you prefer less spice, use mild sausage and reduce the red pepper flakes to 1/4 teaspoon. For more burn, add a pinch of cayenne pepper or a dash of hot sauce to the finished dish.
