Sausage and Citrus Skillet with Warm Spinach

Ingredients

  • 1 poundItalian sausage (hot or mild, your preference)
  • 1 mediumyellow onion
  • 3 clovesgarlic
  • 1 wholelemon
  • 1 wholeorange
  • 4 cupsfresh spinach
  • ½ cupchicken broth
  • 1 tablespoonolive oil
  • ¼ teaspoonred pepper flakes
  • 1 pinchsalt and black pepper

Prep

    Dice 1 medium yellow onion and mince 3 cloves garlic.

    Zest 1 lemon and 1 orange, then juice both fruits.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Remove sausage from casings and crumble into the pan. Cook, stirring occasionally, until browned and cooked through, about 8 minutes. Transfer to a plate.

    In the same skillet, add diced onion and cook for 3 minutes until softened. Add minced garlic and red pepper flakes, stirring for 30 seconds until fragrant.

    Pour in 1/2 cup chicken broth, then add the zest and juice from 1 lemon and 1 orange. Scrape the bottom of the pan to release any browned bits. Simmer for 2 minutes.

    Return sausage to the skillet. Add 4 cups fresh spinach and stir until wilted, about 2 minutes. Taste and adjust salt and pepper as needed.

    Serve immediately, warm from the skillet.

Spice Tips

For a brighter finish, add a pinch of cayenne pepper or a dash of hot sauce at the end. Fresh basil or mint stirred in at the very last moment adds herbal freshness. A squeeze of fresh lime juice just before serving deepens the zesty profile.

This recipe comes together in 20 minutes flat. Swap spinach for kale or arugula if you prefer. Leftovers keep for 2 days in the fridge and reheat gently on the stovetop.
