Charred Shrimp & Avocado Toast with Lime Crema

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 2avocado
  • 4 slicesbread (sourdough or crusty)
  • 3 tablespoonolive oil
  • 3 clovesgarlic
  • 2lime
  • ¼ cupsour cream
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes
  • ¼ cupcilantro

Prep

    Peel and devein the shrimp if not already done.

    Mince 3 cloves garlic.

    Cut 2 limes in half for juicing.

    Roughly chop about 1/4 cup cilantro.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Pat the shrimp dry with paper towels and season with salt and pepper. Working in two batches, cook the shrimp for 2 to 3 minutes per side until pink and charred on the edges. Transfer to a plate.

    In a small bowl, whisk together the sour cream, juice of 1 lime, salt, and pepper to taste. Set the lime crema aside.

    Toast the bread slices until golden and crispy.

    Halve each avocado, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, then season with salt, pepper, and juice from the remaining lime.

    Spread the mashed avocado onto each toast slice. Top with a portion of the charred shrimp, a drizzle of lime crema, a pinch of red pepper flakes, and a scatter of fresh cilantro.

Spice Tips

For a kick, stir a pinch of cayenne or smoked paprika into the lime crema, or top with thinly sliced jalapeño. A dash of hot sauce drizzled over the toast adds brightness and heat.

This comes together in under 20 minutes. You can prep the lime crema and cilantro up to a few hours ahead. For extra richness, add a dollop of crème fraîche instead of sour cream.
