Garlic Butter Shrimp with Avocado Toast

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 3 tablespoonbutter
  • 4 clovesgarlic
  • 4 slicesbread (crusty or sourdough)
  • 2 wholeavocado (ripe)
  • 1 wholelemon
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes

    Mince 4 cloves garlic.

    Cut 1 lemon into wedges.

Method

    Heat 1 tablespoon butter in a large skillet over medium-high heat. Once foaming, add the shrimp in a single layer. Cook 2 minutes per side until pink and cooked through (total 4 minutes). Transfer to a plate.

    Reduce heat to medium. Add remaining 2 tablespoons butter to the pan with the minced garlic. Cook 30 seconds until fragrant, then add the shrimp back in. Toss to coat, season with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and the red pepper flakes. Remove from heat.

    While the shrimp cooks, toast the bread until golden and crispy.

    Cut each avocado in half, remove the pit, and scoop the flesh onto the warm toast. Mash lightly with a fork, then season with a pinch of salt and squeeze of fresh lemon juice.

    Top each toast with a portion of the garlic butter shrimp and pan drippings. Serve immediately with lemon wedges.

Spice Tips

The dish is mildly seasoned by design. For more heat, increase the red pepper flakes to 1/2 teaspoon or add a pinch of cayenne to the butter. A dash of hot sauce drizzled over the top also works beautifully.

Ripe avocados are key—pick one that yields slightly to pressure. If your avocados are firm, prep them while the shrimp cooks or assemble the toast first. Leftovers don't keep well; serve immediately.
