Garlic Shrimp with Avocado and Lime

Ingredients

  • 1 poundlarge shrimp (peeled and deveined)
  • 2avocado
  • 2lime
  • 3 tablespoonolive oil
  • 4 clovesgarlic
  • ½ mediumred onion
  • 1 cupcherry tomatoes
  • ·kosher salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes

Prep

    Peel and devein 1 pound large shrimp if not already done.

    Mince 4 cloves garlic.

  3. 03

    Dice 1/2 medium red onion.

    Halve 2 cherry tomatoes and discard any excess juice.

    Cut 2 avocados in half, remove the pit, and slice lengthwise into strips.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant.

    Add shrimp to the pan, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook for 2 to 3 minutes per side until pink and cooked through. Transfer to a plate.

    Add the remaining 1 tablespoon olive oil to the pan. Add diced red onion and cherry tomatoes, sauté for 2 minutes until softened.

    Return shrimp to the pan. Squeeze juice from 1 lime over everything, toss gently, and cook for 1 minute to warm through.

    Divide among bowls. Top each serving with sliced avocado, juice from remaining lime, a pinch of red pepper flakes, and fresh black pepper.

Spice Tips

For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A dash of hot sauce (like Tabasco or sriracha) drizzled at the end adds spicy depth. Fresh cilantro scattered on top complements the lime and avocado.

This comes together in under 20 minutes. You can sub halibut or mahi-mahi for shrimp if preferred. For extra greens, serve over arugula or spinach.
