Garlic-Butter Shrimp with Charred Broccoli

Cut 1 pound broccoli into florets.

Mince 4 garlic cloves.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add broccoli florets in a single layer. Let them sit undisturbed for 3-4 minutes until the bottoms char, then toss and cook another 2-3 minutes until tender-crisp. Season with salt and pepper, then transfer to a plate.

In the same pan, reduce heat to medium. Add 3 tablespoons butter and minced garlic. Cook for about 1 minute until fragrant, then add red pepper flakes and stir.

Increase heat to medium-high. Add shrimp in a single layer, season with salt and pepper, and cook for 2 minutes without moving them.

Flip the shrimp and cook for another 1-2 minutes until they are opaque throughout and just cooked through.

Return the broccoli to the pan and toss everything together. Squeeze the juice of 1 lemon over the dish, toss once more, and serve immediately.
Spice Tips
For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A splash of white wine (1/4 cup) or a teaspoon of Dijon mustard stirred in at the end adds depth.
Don't overcook the shrimp—they go from perfectly tender to rubbery fast. Look for large shrimp (21-25 count per pound) for the best texture.
