Garlic-Butter Shrimp with Crispy Broccoli & Brown Rice

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 1½ poundbroccoli
  • 1 cupbrown rice
  • 2 cupswater
  • 4 tablespoonbutter
  • 6 clovesgarlic

  • 2 tablespoonsoy sauce
  • 1lemon

    Mince 6 cloves garlic.

    Peel and devein 1 pound large shrimp if not already done.

    Cut 1.5 pounds broccoli into florets (about 2 inches each).

    Cut 1 lemon in half.

Method

    In a small pot, bring 2 cups water to a boil. Add 1 cup brown rice, reduce to a simmer, cover, and cook for 45 minutes until tender.

    While rice cooks, cut broccoli into florets (about 2 inches). Heat 2 tablespoons butter in a large skillet over medium-high heat. Add broccoli in a single layer and cook undisturbed for 4 minutes until the florets begin to char, then stir and cook another 3 minutes until tender-crisp. Transfer to a plate and season with salt and pepper.

    In the same skillet, melt the remaining 2 tablespoons butter over medium heat. Add minced garlic and red pepper flakes, stirring for 30 seconds until fragrant.

    Add shrimp to the pan, spread in a single layer, and cook for 2 minutes without stirring. Flip, then cook another 1 to 2 minutes until the shrimp are opaque and just cooked through (do not overcook).

    Pour in soy sauce and squeeze half the lemon into the pan. Toss gently to coat. Return broccoli to the skillet and toss everything together for 1 minute to warm through.

    Divide brown rice among bowls, top with shrimp and broccoli, and drizzle with pan juices. Serve with lemon wedges.

Spice Tips

For warmth, increase the red pepper flakes to 1/2 teaspoon or add a dash of sriracha at the table. A pinch of white miso stirred into the pan with the soy sauce adds umami depth. Fresh ginger minced alongside the garlic brightens the dish.

Brown rice can be cooked ahead and reheated. For a quicker meal, use quick-cook brown rice or white rice (30 minutes total). Shrimp cook fast—watch closely so they don't become rubbery.
