Garlicky Shrimp and Broccoli with Crispy Rice

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 1½ poundbroccoli
  • 6 clovesgarlic
  • 1 tablespoonginger
  • 3 tablespoonsoy sauce
  • 2 tablespoonoyster sauce
  • 1 tablespoonrice vinegar
  • 3 tablespoonvegetable oil
  • 1 teaspoonsesame oil
  • ·salt
  • ·white pepper
  • 2 cupswhite rice (day-old, cooked)

Prep

    Peel and devein the shrimp if not already done.

    Peel and mince 6 cloves garlic.

  3. 03

    Peel and finely mince 1 tablespoon ginger.

    Cut broccoli into florets, about 2 inches each.

    If using fresh rice, spread it on a sheet to cool to room temperature, breaking up any clumps.

Method

    Heat 2 tablespoons oil in a large skillet over medium-high heat. Once shimmering, add the broccoli florets in a single layer. Let them cook undisturbed for 3-4 minutes until the undersides turn golden, then stir and cook another 2-3 minutes until bright green and tender-crisp. Season with a pinch of salt and white pepper, then transfer to a plate.

    Return the skillet to medium-high heat with 1 tablespoon oil. Add the shrimp in a single layer and cook for 2-3 minutes until they start to curl and turn opaque. Season with salt and white pepper, stir, and cook another 1-2 minutes until fully pink. Transfer to the plate with the broccoli.

    Lower heat to medium. Add a touch more oil if needed, then add the minced garlic and ginger. Stir constantly for 30 seconds until fragrant, being careful not to burn.

    Stir in the soy sauce, oyster sauce, and rice vinegar. Let simmer for 30 seconds.

    Return the shrimp and broccoli to the skillet along with the cooked rice. Toss everything together over heat for 1-2 minutes until well combined and heated through. Drizzle with sesame oil and toss once more.

    Divide among bowls and serve immediately.

Spice Tips

For a bit of heat, add a pinch of red pepper flakes or a small drizzle of chili oil when you cook the garlic and ginger. For deeper umami, try a teaspoon of fish sauce alongside the soy sauce. A squeeze of fresh lime juice just before serving brightens the whole dish.
