Garlic-Butter Shrimp with Charred Peppers and Lime
Ingredients
- 1 poundshrimp (large, peeled and deveined)
- 2 wholebell pepper (mixed colors)
- 4 clovesgarlic
- 3 tablespoonbutter
- 1 wholelime
- ¼ teaspoonred pepper flakes
- ·salt
- ·black pepper
Prep
- 01
Dice 2 bell peppers into 1-inch pieces.
- 02
Mince 4 cloves garlic.
Method
- 01
Heat 1 1/2 tablespoons butter in a large skillet over medium-high heat. Add the diced bell peppers and cook for 4–5 minutes, stirring occasionally, until they begin to char at the edges. Season with salt and pepper, then transfer to a plate.
- 02
Add the remaining 1 1/2 tablespoons butter to the same skillet and increase heat to high. Once foaming, add the shrimp in a single layer and cook for 1 1/2 minutes on each side until just opaque and pink. Do not overcrowd; work in batches if needed.
- 03
Push the shrimp to the side of the pan. Add the minced garlic and red pepper flakes to the empty space and cook for 30 seconds until fragrant.
- 04
Return the peppers to the pan and toss everything together. Squeeze the lime juice over the top, season with salt and pepper to taste, and serve immediately.
Spice Tips
For warmth, increase the red pepper flakes to 1/2 teaspoon. For more heat, add a pinch of cayenne. Fresh cilantro or parsley scattered on top adds brightness.
