Garlic Shrimp with Charred Peppers and Lime
Ingredients
- 1 poundlarge shrimp (peeled and deveined)
- 2 wholebell peppers (red and yellow)
- 4 clovesgarlic
- 1lime
- 3 tablespoonolive oil
- ¼ teaspoonred pepper flakes

Prep

Halve 2 bell peppers lengthwise, remove seeds and stems, and cut into 1-inch strips.

Mince 4 cloves garlic.

Cut 1 lime in half.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Add bell pepper pieces and cook for 5–7 minutes, stirring occasionally, until they have light char marks and are tender-crisp. Season with salt and pepper. Transfer to a plate.

Add remaining 1 tablespoon olive oil to the same skillet. Add minced garlic and red pepper flakes; cook for 30 seconds until fragrant.

Add shrimp in a single layer and cook for 2–3 minutes on the first side without stirring.

Flip shrimp and cook another 1–2 minutes until pink and cooked through.

Return peppers to the skillet. Squeeze juice from lime over everything and toss gently. Taste and adjust salt and pepper.

Serve immediately, optionally over rice or with crusty bread to catch the juices.
Spice Tips
For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A splash of white wine or fish sauce in the final toss adds savory depth. Fresh cilantro or basil scattered over the finished dish brightens the plate.
