Ingredients

  • 1½ poundslarge shrimp (peeled and deveined)
  • 3 wholebell peppers (mixed colors)
  • 6 clovesgarlic
  • ¼ cupolive oil
  • 1 wholelemon
  • ·salt
  • ·black pepper
  • ½ teaspoonred pepper flakes

Prep

    Slice the bell peppers into 1-inch strips, removing seeds and stems.

    Mince the 6 cloves of garlic.

    Preheat your oven to 425°F.

    On a large sheet pan, toss the shrimp and bell peppers with the olive oil, garlic, red pepper flakes, salt, and black pepper until evenly coated.

    Spread everything in a single layer on the sheet pan.

    Roast for 12 to 15 minutes, stirring halfway through, until the shrimp are opaque and the peppers are soft with charred edges.

Spice Tips

For more heat, increase the red pepper flakes to 1 teaspoon or add a pinch of cayenne. A splash of white wine or chicken broth poured onto the pan before roasting adds richness. Fresh parsley or basil sprinkled at the end brightens the dish.
