  • 1 poundlarge shrimp (peeled and deveined)
  • 2 mediumbell peppers (red or yellow)
  • 1 mediumyellow onion
  • 4 clovesgarlic
  • 1 can (15 oz)canned white beans (cannellini or great northern)

  • 1 tablespoonolive oil
  • ½ cupchicken broth
  • 1 wholelemon
  • ¼ teaspoonsalt
  • ¼ teaspoonblack pepper
  • ¼ teaspoonred pepper flakes
  • 2 tablespoonfresh parsley (optional, for garnish)

Prep

    Dice the bell peppers into 1-inch pieces.

    Dice the yellow onion into small pieces.

    Mince 4 cloves garlic.

Method

    Heat olive oil in a large skillet over medium-high heat. Add the diced onion and bell peppers; cook for 5 minutes, stirring occasionally, until softened.

Spice Tips

For more warmth, increase red pepper flakes to ½ teaspoon or add a pinch of cayenne. Fresh herbs like dill or basil complement the lemon brightness. A splash of white wine (¼ cup) can replace some broth for deeper flavor.
