Shrimp with Charred Peppers and Crispy Garlic
Ingredients
- 1 poundlarge shrimp (peeled and deveined)
- 3 wholebell peppers (mixed colors)
- 6 clovesgarlic
- 3 tablespoonolive oil
- 1 wholelemon
- ½ teaspoonkosher salt
- ¼ teaspoonblack pepper
- ¼ teaspoonred pepper flakes
- ¼ cupfresh parsley

Slice 3 bell peppers into 1/2-inch-wide strips, removing seeds and white pith.

Mince 6 cloves garlic.

Chop 1/4 cup fresh parsley.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Once the oil shimmers, add the pepper strips. Cook, stirring occasionally, for 6–8 minutes until the peppers are soft and charred at the edges. Season with salt and black pepper. Transfer to a plate.

Add the remaining 1 tablespoon oil to the same skillet. Add the minced garlic and red pepper flakes. Cook for 30 seconds to 1 minute, stirring constantly, until fragrant.

Add the shrimp to the skillet in a single layer. Cook for 2 minutes without stirring, then flip and cook for another 2 minutes until the shrimp are pink and cooked through.

Return the peppers to the skillet. Squeeze the lemon juice over everything and toss gently to combine. Taste and adjust seasoning if needed.

Serve immediately, garnished with fresh parsley.
Spice Tips
For more heat, increase the red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A dash of smoked paprika adds depth if you'd like something warmer without more spice.
Serve over rice, quinoa, or with crusty bread to soak up the garlicky pan juices. You can prep the peppers and garlic up to 4 hours ahead and store in the fridge.
